These Keto chocolate chip cookies are absolutely incredible! The moment I made them I knew I had to share this recipe! I personally made my own adjustments to work with my dairy allergy and also used Trim Healthy Mamas Gentle Sweet in place of plain erythritol. So I am going to share the recipe exactly how I have learned to love it and you seriously cannot mess this up! I have made them several times and they are perfectly chewy chocolate cookies every single time!
My husband says he feels like he is eating a normal chocolate chip cookie! I consider that a total win!
I mean, how delicious does this cookie look?!Gather your ingredients cause it’s time to make some cookies! Start by preheating your oven to 350F so its all ready to bake your cookies to perfection!
In a large bowl, whisk your eggs with a mixer until it is nice and frothy (If you don’t have a mixer, you can use a wire whisk and get a little workout *wink*) Add your vanilla, Trim Healthy Mama Gentle Sweet (or other low- carb sweetener of your choice) and coconut oil. I personally use the Gentle Sweet because it is a consistency like powdered sugar so it is very smooth and it is so easy to work with to get the right level of sweet that you need!
Next add your coconut flour, gelatin, baking soda and salt to the wet ingredients.
I’m gunna pause here a minute and chat with you about this gelatin. Yes it is beef gelatin, but no it does not taste like beef! When I first read this ingredient I thought, “surely this is a typo!” I am here to tell you it is not a typo, but it does not taste like anything. It is just there as a thickener and it makes the ingredients form together just like a cookie dough! I recommend the NOW brand of gelatin because it is the most affordable online option I have found (you do not need to buy a big bag because you don’t use much of it) and I trust the NOW brand completely! Throw in your delicious sugar free chocolate chips (I personally use Hershey’s brand) and mix it all together good!Now it is time to roll this dough into some little cookies. I personally just use my hands for this cause the dough can be slightly flaky so it is easier to form it together with my hands. I roll a ball of dough into about a 1″ ball and place it on the cookie sheet. I prepare my cookie sheet by spreading some coconut oil on the pan and it works great!Bake for 10-12 minutes depending on your oven. I personally do about 12 minutes at least cause I like the tops to be a little golden brown.
Once they are done, eat one (or two) fresh out of the oven (you can thank me later) and let the rest of them cool completely before storing them in a container! I have found they stay super chewy and perfect the longer I let them cool! These stay perfect and delicious for about 5 days, but no need to worry because you will eat them all before day 3!
