You will learn through my food posts that I have a pretty serious dairy and egg allergy and because of eating all Keto, I also avoid as many carbs as possible! Breakfast is my favorite meal of the day and because I can’t have eggs this makes it very difficult for me to consume in a delicious breakfast. I started making these THM Oatmeal on the go cups and they have been life changing for me! They do have egg whites in them and I took the risk with my egg allergy and have found they do not bother me, thankfully! YAY!I highly recommend these! They are so easy to make, super yummy and they freeze great too! I always make a large amount of them, keep them in the freezer and pull them out as needed!
So let’s get started!
Preheat oven to 425 F. Line your 12 cup muffin tin with liners or you can use silicone cupcake cups that I recommend in my March Top 5 Tuesday post! If you use normal disposable liners then spray or coat with coconut oil to prevent sticking.Mix together your oats and Gentle Sweet. If you are unfamiliar with Trim Healthy Mama’s Gentle Sweet, it is time to become familiar! It is an all natural sugar substitute and it is a combination of Non-GMO Xylitol, Non-GMO Erythritol and Organic Stevia Extract Powder. It replaces sugar so beautifully and doesn’t mess with your blood sugar! You can read more about Gentle Sweet by clicking on the image below!Next you want to smash-up some bananas! My husband doesn’t like bananas and this is the moment where he exits the room. Not only does he hate the flavor of bananas, but he doesn’t like the smell or the sound of me squashing it into mush! I, on the other hand, love bananas even all mashed up!Add your bananas into your bowl and mix it up good! Next, add your blueberries, egg whites (I highly recommend a carton of egg whites! Don’t waste those yolks!) and almond or cashew milk.Finally, add your baking powder, mineral salt and vanilla! The recipe does call for banana extract and integral collagen (for added protein). I personally do not add these ingredients, but you are more than welcome to!
Pour the batter into the prepared muffin cups.
Bake them in the oven for 17-18 minutes and they are ready for you to enjoy!!
