THM Oatmeal on the go cups

You will find that as I share recipes here they will mostly be low-carb healthy recipes for the family, Keto friendly, and always delicious! I am a big fan of Trim Healthy Mama and everything they stand for! If you haven’t heard of them, please check out their website! They always have great recipes through their cookbooks and on Pinterest! 

You will learn through my food posts that I have a pretty serious dairy and egg allergy and because of eating all Keto, I also avoid as many carbs as possible! Breakfast is my favorite meal of the day and because I can’t have eggs this makes it very difficult for me to consume in a delicious breakfast. I started making these THM Oatmeal on the go cups and they have been life changing for me! They do have egg whites in them and I took the risk with my egg allergy and have found they do not bother me, thankfully! YAY!IMG_6796.jpgI highly recommend these! They are so easy to make, super yummy and they freeze great too! I always make a large amount of them, keep them in the freezer and pull them out as needed!

So let’s get started!

Preheat oven to 425 F. Line your 12 cup muffin tin with liners or you can use silicone cupcake cups that I recommend in my March Top 5 Tuesday post! If you use normal disposable liners then spray or coat with coconut oil to prevent sticking.IMG_6731.jpgMix together your oats and Gentle Sweet. If you are unfamiliar with Trim Healthy Mama’s Gentle Sweet, it is time to become familiar! It is an all natural sugar substitute and it is a combination of Non-GMO Xylitol, Non-GMO Erythritol and Organic Stevia Extract Powder. It replaces sugar so beautifully and doesn’t mess with your blood sugar! You can read more about Gentle Sweet by clicking on the image below!IMG_6745Next you want to smash-up some bananas! My husband doesn’t like bananas and this is the moment where he exits the room. Not only does he hate the flavor of bananas, but he doesn’t like the smell or the sound of me squashing it into mush! I, on the other hand, love bananas even all mashed up!IMG_6762.jpgAdd your bananas into your bowl and mix it up good! Next, add your blueberries, egg whites (I highly recommend a carton of egg whites! Don’t waste those yolks!) and almond or cashew milk.IMG_6774Finally, add your baking powder, mineral salt and vanilla! The recipe does call for banana extract and integral collagen (for added protein). I personally do not add these ingredients, but you are more than welcome to!

Pour the batter into the prepared muffin cups.

Bake them in the oven for 17-18 minutes and they are ready for you to enjoy!!
